This of course can be made for any season, not just summer. I just love chicken salad in the summer for some reason!
Ingredients:
2-4 chicken boneless skinless chicken breasts
1 1/2 -2 c mayonnaise
1 small onion chopped
1/2 c ranch dressing
1/2 tbsp paprika
1 tbsp parsley
Directions:
Boil chicken over stove until cooked through (about 15-20 minutes).
Let cool.
Chop or shred chicken in to small bite size pieces.
Combine chicken, onion, ranch dressing and mayonnaise.
Top with parsley and paprika.
Serve.
